Bouchot Mussel (Mytillus Edulis)
Bouchot farming:
Mussel larvae (spat) settle on ropes that are then wrapped around wood stakes 4 to 6 metres high, planted into the sand, called bouchot.
Special features:
A small, but meaty mussel, with a highly orange colour. Its taste is pleasantly iodized.
Harvest period: July to January
