Bouchot Mussel (Mytillus Edulis)

Bouchot farming:
Mussel larvae (spat) settle on ropes that are then wrapped around wood stakes 4 to 6 metres high, planted into the sand, called bouchot.
Special features:
A small, but meaty mussel, with a highly orange colour. Its taste is pleasantly iodized.
Harvest period: July to January

Mussel from Greece (Mytilus Galloprovincialis)

Rope mussels:
Mussel larvae (spat) settle on ropes immersed in the lagoon under floats or beds. This farming technique is used essentially in the Mediterranean basin.
Special features:
A meaty mussel of a colour varying from light yellow to orange, with a particularly iodized taste.

Mussel from the Netherlands (Mytillus Edulis)

Bottom mussels:
They grow on the sand in deep water and are then collected using a dredge. 
Special features:
A meaty, flesh-coloured mussel varying from light yellow to orange with a lightly iodized taste.
Harvest period: Mid-July to April


Mussel from Italy (Mytilus Galloprovincialis)

Mussel from Ireland (Mytillus Edulis)

Mussel larvae (spat) settle on ropes immersed in the lagoon under floats. They also grow on sand in deep water and are then collected using a dredge. 
Special features:
A meaty mussel with a flesh colour varying from bright yellow to orange. Its taste is lightly iodized.
Harvest period: mid-October to April

Mussel larvae (spat) settle on ropes immersed in the lagoon under floats or beds.
Special features: A meaty, flesh-coloured mussel varying from light yellow to orange with a lightly iodized taste.
Harvest period: April to July
